Schezwan Fried Rice is a very popular Indo Chinese Rice recipe made with the spicy Schezwan Sauce. Also, it has the recipe to make spicy sauce. It is also called as Schezwan Chutney, is often used as sauce to make Schezwan Fried Rice or as spicy dips for the fried snacks.
Schezwan sauce is made with Schezwan peppers but that isn't available everywhere, that is why I used the easily available peppers to make the sauce.
You could make the sauce in advance and refrigerate it for two weeks, if you want longer shelf life, you would need to add Sesame oil at last just before taking the sauce off the stove.
Always add spices/red chilies according to your spice level**. The recipe made here is pretty spicy, so if you do not want that much spicy reduce the number of Red Chili added in the beginning to make the sauce.

Ingredients
  

To make Schezwan Sauce

  • 5 Red Chilies Dried
  • 3 Kashmiri Red Chilies Dried
  • 1/4 cup Hot water
  • 1 tsp Kashmiri Chilli powder
  • 1/4 cup Water
  • 2 tbsp Vegetable OIl
  • 2 tsp Garlic minced
  • 1 tsp Ginger chopped
  • 1/4 cup Onion finely chopped
  • 2 tsp Black pepper powder
  • 1 tbsp Soya sauce
  • 2 tsp Vinegar
  • 1/2 tsp Salt (or add as per taste)
  • 2 tsp Sugar

To make Schezwan Fried Rice

  • 2 tbsp Vegetable oil
  • 2 tsp Garlic chopped
  • 1/2 tsp Ginger chopped
  • 1 big Onion chopped
  • 1/2 cup Spring onion chopped
  • 1 cup Cabbage Shredded
  • 3/4 cup Carrots chopped
  • 3/4cup cup Capsicum chopped
  • 1/2 cup Corn
  • 2 tsp Pepper powder
  • 4 tbsp Schezwan Sauce Add according to your spice level
  • 4 cups Basmati Rice Cooked
  • 1 tsp Sugar
  • 2 tsp Sesame oil
  • Salt to taste

Instructions
 

  • To a small bowl, put the red chilies and Kashmiri red chilies and the hot water
  • Soak it for 15mins
  • After 15mins, move it to a mixie or grinder, add the kashmiri chili powder, and the water
  • Grind it into a paste and keep it aside
  • Into a pan, heat vegetable oil
  • Add ginger, garlic chops, stir for 2mins
  • Then add the onion and saute it for 3mins
  • Then add the chili paste made before
  • Stir and mix well to the onion
  • Add the black pepper powder, soya sauce, sugar, salt and vinegar
  • Stir between adding each of the ingredients
  • Stir until the water reduces and thickens
  • Cook for 5mins
  • Then take off the stove
  • The Schezwan sauce is ready

Making the Schezwan Fried Rice

  • Into a wok or a big pan, pour the vegetable oil
  • Then put the garlic, ginger, stir for 3mins
  • Add onion, and spring onion.
  • Stir for 5mins
  • Then add the veggies: cabbage, capsicum, carrots, and corn
  • Stir everything well for 4min on high flame
  • Then to it add the schezwan sauce
  • Stir the sauce into the veggies
  • Then add the Cooked Basmati rice
  • Stir until well mixed
  • Add salt to taste
  • To it add the sugar and sesame oil
  • Stir well for another 5mins
  • Yummy Schezwan Fried Rice Ready!!
