Funfetti Sprinkle Cake

A simple recipe for Funfetti or Sprinkle Cake. This is a soft, spongy and yummy cake, very easy to make especially for birthdays.
I have used 6 inches round cake pan and got 3 cakes of the same size. If you have a different size pans, you just need to watch for the change in the baking time.
The vanila frosting made here is for the layering and covering of the three 6 inches cakes. For the rosettes and decoration, I prepared the buttercream with the same recipe once more.
So, let's see how it is made!!

Equipment

  • Hand mixer or Stand mixer
  • Mixing bowl
  • Convection Oven

Ingredients
  

Dry Ingredients

  • 2 cups All-purpose Flour
  • tsp Baking powder
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • cups Sugar
  • ½ cup Sprinkles

Wet Ingredients

  • 1 cup Unsalted Butter room temperature
  • 2 Eggs room temperature
  • 1 cup Buttermilk room
  • 2 tsp Lemon Zest
  • 2 tsp Lemon juice
  • 2 tsp Vanila Extract

Vanila Buttercream

  • 200 gms Unsalted Butter Softened
  • 450 gms Powdered Sugar
  • 4or 5 tbsp Whipping cream or Whole Milk
  • 2 tsp Vanila extract

Instructions
 

  • Preheat the oven to 355degrees fahrenheit or 180 degree Celsius
  • Into a bowl, sift together all-purpose flour, baking powder, baking soda, and salt
  • Keep it aside
  • Into a mixing bowl, put the butter and beat under soft
  • Then to it add the sugar to the beaten butter and beat until well mixed and creamy
  • Add the eggs and beat well
  • Once well mixed add the lemon zest and mix
  • Then add the sifted dry ingredients and the buttermilk alternatively in three batches
  • And mixing after each addition
  • Once everything is mixed well, add the lemon juice and the vanilla extract
  • Using a spatula scrape down all the sides and mix for 3-4mins
  • To the mix add the sprinkles and mix well with the spatula, do not use the mixer for this step
  • Move the batter to three 6 inches pans lined with parchment paper
  • 2 cups of batter in each of the pans
  • Bake for 40-45mins or until the tester comes out clean
  • Move to the wired rack and let it cool

For the buttercream

  • Into the mixing bowl, add the softened unsalted butter and mix until creamy
  • Add the sifted powdered sugar in batches and whipping cream alternatively
  • Mix well until creamy and soft
  • Add vanila essence and mix well until soft peaks

Frosting the cake

  • Let the cakes cool down
  • Then spread the buttercream on the cake with a spatula
  • Place another cake on top of the buttercream
  • Again spread the buttercream on top of the second cake
  • Then place the third cake on the cream
  • Cover the cake with the rest of the buttercream

Notes

The baking time would vary depending on the oven and you should check it after 35mins OR 5 mins before the baking time given in the recipe(not just in this but also in other recipes). 
The sprinkles you add can be more or less depending on your likings. 
The vanilla buttercream made above is just enough for layering and covering the cake. 
For the rosettes, I had to make the vanilla buttercream with the same recipe given above.
