Chicken Fried Rice – a famous street food, that we recreate in different ways at home. We all have had different varieties of chicken fried rice. Each place has its own style of this wonderful recipe. Some places, they add fried chicken, some add boiled chicken, some go for shredded chicken while others put chicken cubes. Any form, it is one of the delicious recipes to try and eat.
Here. I'm presenting one of such versions, but very easy to follow. So why not try this recipe then?
When we are in kitchen after a busy week day, and do not have much time or strength for a long and detailed dinner, this is the right recipe to cook. If you have some left over cooked rice in the fridge, and some chicken in the freezer, then you are good with a yummy protein rich chicken fried rice in less than 30mins. Also, if you are looking for a yummy lunch or tiffin recipe, again this is the right recipe for you.
As it is loaded with chicken pieces, it is hence a protein rich food and also a healthier version as well, because I'm adding only cooked chicken and not fried ones.
The soy sauce adds its own flavor and color, but if you do not like it, its totally fine to skip, but just need to add 1 more tablespoon of chicken stock to the ones given in the recipe as the stock has all the flavor of chicken.

Ingredients
  

To cook chicken

  • 250 gms Boneless Chicken ½ inch pieces
  • 1 tsp Chili flakes
  • 1 tsp Pepper powder
  • Salt to taste
  • 3 tbsp Water

For the fried rice

  • 4 cups Basmati rice Cooked
  • 2 tbsp Sesame oil
  • 2 tbsp Vegetable oil
  • 1 tsp Ginger chopped
  • 2 tsp Garlic chopped
  • 3 or 4 Green chilies chopped
  • ¼ cup Green onion chopped
  • 1 cup Cabbage shredded
  • ½ cup Carrot chopped into small pieces
  • 2 or 3 Eggs well beaten
  • 1 tsp Pepper powder
  • Salt to taste
  • 1 tbsp Soy sauce
  • 1 tsp Vinegar

Instructions
 

Cooking chicken pieces

  • Into a pan kept on medium flame, put chicken pieces and all the ingredients under the "to cook chicken" section.
  • Stir and close the pan
  • Cook for 20 mins
  • After that take the pan from the stove, separate the chicken and stock into different bowls
  • And keep both the bowls aside

Making Chicken Fried Rice

  • Into a wok kept on medium to high flame, pour sesame oil and vegetable oil
  • Drop ginger, garlic, green chilies and stir until it turns slight brown
  • Then to it add the shredded cabbage, carrot pieces and stir until is slightly done
  • Once that is done, move the veggies to the side of the pan and pour the beaten egg mix onto the space made
  • Do not stir for few seconds until the base of the eggs start to solidify
  • Then stir well with the veggies without breaking the egg too much.
  • Then to it add the pepper powder and stir well
  • Add the cooked rice, and cooked chicken to it and stir until well mixed
  • Add the soy sauce, vinegar, 1½ tbsp of Chicken stock
  • Add salt if needed
  • And stir everything well until the rice is hot and starts steaming
  • Garnish with more green onions
  • Move the Yummy chicken fried rice to a serving bowl
  • Serve hot with or without sauce
