Vermicelli Upma – A very easy and simple Upma recipe loaded with vegetables and hence a very nutritional breakfast to start the day with. However, you can skip adding carrots, bell peppers and french beans and just add onions and tomatoes instead depending on your interests.
Vermicelli is made out of rice and as it looks like noodles, it is called rice noodles. And it is a favorite in my family as my little ones would finish it in no time. It is one of the best methods of making them eat those veggies, that they eat every single bit without any fuss.
*** I have used the roasted vermicelli, and hence there is no need of separate roasting. If the vermicelli packet that you have doesn't specify roasted, you just need to roast the vermicelli in ghee or oil for a few minutes.
*** Here I have taken 3¾ cups of hot water for 6 cups of Vermicelli, but that will depend on the quality and thickness of the vermicelli used.
*** The one I used is very thin and it would get cooked in minutes. So need to be very careful while adding water, as we don't want the vermicelli to get mashed up in excess water.
*** Also keep stirring gently once steam forms up in low flame, as it would help in getting the strands separated rather everything sticking together.

Ingredients
  

  • 6 cups Roasted Vermicelli
  • cup Hot Water
  • 2 tbsp Coconut oil
  • 1 tbsp Ginger chopped
  • ½ tbsp Garlic chopped
  • 3 or 4 Green Chilies Cut into halves
  • 1 cup Carrot diced into very small pieces
  • 1 cup French beans cut into small pieces
  • ½ cup Capsicum cut into small pieces
  • ¼ tsp Turmeric powder
  • Salt to taste
  • Curry leaves

Instructions
 

  • Into a pan kept on medium pan, pour coconut oil
  • Once it is heated, add the ginger, garlic and green chilies chopped
  • Stir for few minutes until it turns soft
  • Then to it add chopped onions and stir until soft
  • After that, to the pan add the carrots, beans and bell peppers(capsicum) and stir until half done
  • Add a little salt for the veggies to cook faster
  • Add turmeric and stir for 2 mins
  • Once the veggies are half done, add the hot water and stir well
  • Add salt to taste, let the water be a little salty, then that would be perfect once after adding the vermicelli
  • Let the water boil for 1 minute or until the veggies are just cooked
  • Then to it add the roasted vermicelli and stir well to the water
  • Keep stirring until the water is completely absorbed and the vermicelli is cooked
  • Add curry leaves and stir
  • Once stirred, close the pan and cook for 8 mins on low flame
  • After that, open the pan and gently stir the upma to separate the strands otherwise it would be sticky
  • Keep stirring and move to another serving bowl
  • Yummy Vermicelli Upma is ready
  • Serve hot with or without any chutney

Notes

It is a very yummy and healthy breakfast. Also a good alternative from the usual tiffin box recipes, easy to prepare on a busy weekday morning to pack lunch. 
It is awesome just to have it like that with no chutneys but if you are so particular to have a chutney, coconut chutney or tomato chutney would be a good combination with this upma.
Also, it could be taken with tomato ketchup.
