Mutton chops

Mutton chops is a famous Kerala recipe, it is a very good combination for appam, roti. As Christmas is almost here, we almost would be looking out for recipes that would go with appam. This mutton recipe has mutton cooked with whole spices and then later on added to the gravy which prepared with the basic masalas. Try this and you would enjoy this.

Equipment

  • Pressure Cooker
  • Clay pot or any other skillet

Ingredients
  

To Cook the Mutton

  • 1 kg Mutton small pieces, washed with salt and turmeric powder
  • 1 tbsp Coconut oil
  • 1 tsp Fennel seeds
  • 4 Cardamom
  • 5 Cloves
  • 1 inch Cinnamon
  • 1 tsp Peppercorns
  • 1 tbsp Ginger-garlic paste
  • 1/4 cup Water
  • Salt to taste

To cook the gravy

  • 1 tbsp Coconut oil
  • 3 Red Chilies Dried
  • 2 Onion Chopped
  • 5 Green Chilies Slit into halve
  • 2 tsp Ginger-garlic paste
  • 3 tbsp Lemon Juice
  • Salt to taste

Powder Ingredients

  • 1 tsp Turmeric powder
  • 1 tbsp Chili powder
  • 2 tsp Kashmiri Chilli powder
  • tbsp Coriander powder
  • 2 tsp Garam masala

Instructions
 

Cooking the mutton

  • Into a pressure cooker on medium flame, pour coconut oil
  • Put the whole spices like fennel seeds, cardamom, cloves, cinnamon, and peppercorns
  • Stir well
  • Put the mutton pieces and stir
  • Add salt and ginger-garlic paste
  • Mix well
  • Then close the cooker
  • Wait for 5-6whistles
  • Then let the steam go by itself
  • Then open the cooker, stir the cooked mutton
  • Separate the pieces and the stock

Cooking the gravy

  • Into a clay pot on medium flame, pour the coconut oil
  • Put the red chilies, heat it
  • Then add the chopped onion
  • Saute well for two minutes
  • Add the green chilies and ginger-garlic paste
  • Mix well for 4minutes
  • Then add the powders in the "Powder ingredients"
  • Stir until the raw smell fades
  • Then to it add the tomatoes and stir until the tomatoes turn mushy
  • Once that is done, drop the cooked mutton pieces
  • Stir well and add salt
  • Stir for around 5-6minutes
  • Then add the mutton stock and mix well
  • Close and Cook for 15mins
  • Or until the gravy is reduced
  • After that open and pour the lemon juice
  • Stir well for 5mins more
  • Garnish with curry leaves
  • Yummy Mutton chops is ready..

Notes

Here i have made in a clay pot. Cooking in a clay pot is healthy and it self gives the curry a special flavor. We have cooking in claypot the fish curry, chicken, beef and mutton. And should say it looks good and the food gets extra yummy when did so. 
Nevertheless, if you do not have a clay pot you could use a cast-iron skillet or any other kadai or pan. 
Many of the recipes of Mutton Chop have pepper powder in the gravy, but I personally like the peppercorns in the curry and a bite of it in between and so I added that while I cooked the mutton in the pressure cooker. If you do not like that, you could add the pepper powder in the gravy along with those masalas.
