Into a mixing bowl, break all the four eggs,
Pour the milk and add the salt and pepper
Beat everything well for 2 to 3 mins until the air is whisked into the mixture
Keep it aside
Into a skillet kept on medium flame, pour the olive oil
Then add the garlic, stir for 1 minute
Then add chopped onion and stir for 2-3 mins
Then add the tomatoes and again stir for 3mins
To this add the salt and the seasonings (chili flakes, Italian seasonings, crushed pepper)
Stir everything well until combined
Add the chopped spinach and mix well until it shrinks
Then spread the veggies across the skillet as a layer
Take the egg mixture and beat once more to make it fluffy
Then pour the egg mixture into the skillet evenly on top of the vegetables
Add the cheese on top of the egg as a topping
Cover and cook on low flame
Cook for 8 minutes or until the top portion gets firm and not watery.
Then open the pan and see the yummy frittata
Garnish with chili flakes or any other seasonings that you like.
Cut the frittata when it is at room temperature.
