Quinoa is one of the best sources of protein and fiber making it one of the healthiest food. Here I have made Upma with Quinoa and made a healthy and yummy breakfast recipe. Upma is on the South Indian Food that is made with Semolina or rava added to tempered and boiling water. It is usually made with onions, tomatoes but here I have made it with cabbage, carrots, and spring onions. The result was awesome. Try and you would be in love with this healthy recipe.
1 cupQuinoawashed and soaked as the instructions given on the package
2cupsWarm Water
2 tbspPeanuts
2tbspOlive oil
1tspMustard seeds
1tspFennel seeds
1/2tspGingerchopped
1tspGarlicchopped
3Green Chiliesslit into halves
1tspTurmeric powder
Curry leaves
1cupCabbage and carrot shredded
1/4cupSpring onionchopped
Salt to taste
Instructions
Into a pan, pour oil and put the peanuts and roast it for 2mins
Then take off the peanuts and keep it aside
To the oil, mustard seeds, and fennel seeds
Then once it splutters, add the ginger and garlic and stir for 2 mins
To it add Spring onions, carrots and cabbage shredded, green chilies and curry leaves
Stir for 3-4 mins, no need to wait until it is well sauteed
Add salt to taste and turmeric powder and stir for another minute
To it add the warm water and stir
Close and let the water boil
Once the water is boiled, put the washed and soaked quinoa into the water and stir well
Add salt required as per taste
Stir well
Close and cook on medium to low until the water is absorbed and the quinoa is cooked
The cooking time would vary based on the skillet or pan used
Once the quinoa is cooked and water is absorbed, move to another bowl and garnish with fried peanuts and spring onions.
