Into the oil which is left in the skillet, add the cumin seeds and mustard seeds
Once it splutters add the ginger, garlic, and green chilies
Stir for 3 mins
Then add the chopped shallots and onions and stir well until sauteed
You could either shallots and onion together or separate, it is fine in both ways
Once they turn translucent add the curry powders - turmeric powder, chili powder, kashmiri chili powder, Garam masala, and salt
Once the raw smell of the powders leave and starts appearing oily, add the chopped tomatoes and stir well
Stir until the tomatoes turn mushy and soft
And then add hot water to it and stir well and let it boil
Once it starts boiling, drop the eggs into the gravy and stir
Close and cook for 10mins, stirring intermittently
Then after that add the sugar (optional), curry leaves and crushed peppercorns
Stir for 2mins and that's it

Serve hot with roti, appam, rice
