Have you ever thought what to make with the leftover idlis? Here comes an easy recipe. It wouldn't take more than 15mins but the taste is awesome. I usually make this for lunch for my girls and they just love this. Also if you do not have any side dishes for idli, try this, it is awesome just as it is.. Try this out you would love this..

Equipment

  • Appam chatti or a wok (small)

Ingredients
  

  • 1 Egg
  • 2 Idlis
  • 1 tsp Chili powder
  • 1/2 tsp Salt (or to taste )
  • 1 tsp Coconut oil
  • 2 tbsp Water

Instructions
 

  • Cut the 2 idlis into small pieces (1/2inch sized cubes), you could cut the curvy sides also small 1/2inch long pieces
  • To another bowl, beat an egg,
  • Add chili powder, salt, water and beat well
  • Once beaten well, drop the idli pieces to it and gently stir
  • Keep it aside for 5-10mins
  • To the appa chatti or a small wok kept on low to medium flame, pour coconut oil
  • Once the oil is heated up, pour the egg-idli batter to it, and gently spread it (not too much, but gently to the sides, so that all the idli pieces are laying flat and not on top of the other)
  • Close and cook for 5-7mins until the lower part is cooked or slightly brown/golden color
  • Then using a flat spoon or turner gently flip without breaking the egg idli into pieces
  • (If it is not fully cooked in the lower part, it would break when trying to flip) And if it breaks it is totally fine, you just need to gently spread it nicely
  • Then again cook the other side for another 5-7minutes
  • Then take it off the wok and serve hot
  • Yummy Egg idli is ready.

Notes

The proportion that I mostly use is 1 egg for 2 idlis. But if you want 2 eggs, you could try that out too. And the size of the idli cuts should be small because if it is big while flipping it would be another reason for it to break.

I came up with this idea when my girls do not want to take curry for idlis to school, they say it would be messy taking curries. This recipe, I just make it, cut into pieces and pack it for tiffin, easy for them to eat at school and yummy too. 
At home also when I’m lazy to make chutney or sambhar for idlis, I just do this and everyone loves this.
