A very easy, quick, and yummy potato rice. All you need are few potatoes and some left-over rice and few other ingredients then you are all set for a quick and yummy lunch.
This would be an easy tiffin recipe too. Not much time needed for preparation too. I make this for my girls, they love it and come home with a clean tiffin.

Ingredients
  

  • 3 cups Basmati Rice Cooked, preferably refrigerated. But otherwise also fine.
  • 3 big Potatoes cut into small pieces (cubes)
  • 2 tbsp Vegetable oil
  • 2 tsp Garlic minced
  • 3 Green chilies chopped
  • 1 tsp Fennel seeds
  • 2 Dried Red Chilies
  • Curry leaves
  • tsp Turmeric powder
  • 1 handful Cilantro
  • Salt to taste

Instructions
 

  • Into a skillet or wok, pour the vegetable oil
  • Then drop the fennel seeds, curry leaves and dried red chilies
  • Stir well for 2mins
  • Then add the minced garlic and green chilies
  • Stir until sauteed
  • Add turmeric powder and stir for 2mins
  • Then to it add the potato pieces and salt
  • Stir well for 6-8mins until fried
  • After that add the cooked rice, salt
  • Mix well to the potatoes without breaking the rice
  • Add the chopped cilantro and stir well
  • Cook for 5-8mins (Do not close)
  • After that move to the serving bowl
  • Yummy Potato Rice is Ready!!!

Notes

You do not have to deep fry the potatoes and its good to have that chewy flavor of the potato,
TheLem.  There is no need of any side dishes, but if you are so particular you can have with raita. 
My girls love it,  they keep asking me for the same.
