Chicken Sandwich is everyone's go-to recipe. Especially when we are getting ready for a picnic, a long travel, even tiffins for lunch. Wrap this yummy sandwich in a sandwich bag or parchment paper, you are good to go. However, while packing we always should reduce the liquid content to prevent leakage that could spoil the bag.
In this recipe, i have added cooked chicken and some veggies. As a mommy of two girls, i would not miss even a single chance to make them eat some veggies. So along with chicken and the yummy sauce they would just eat those fresh greens and carrots without much drama. 😊
If you want to skip adding veggies, you could totally do it. Also, any other vegetables of your choice is fine to make some alterations.
So let's see how this easy and yummy Chicken Sandwich is made.

To toast the bread

  • 8 slices Whole Wheat Bread
  • 1 tsp Butter for greasing the pan
  • 2 tbsp Butter for spreading on the bread 2 tbsp is for all the breads

Cooking the chicken

  • 100 gms Chicken Boneless
  • 1 tsp Butter
  • ¼ tsp Garlic powder
  • ¾ tsp Crushed Peppercorns
  • ¼ cup Water
  • Salt to taste

For the filling

  • 3 tbsp Mayonnaise
  • ¼ tsp Italian seasonings
  • ¼ tsp Chili flakes
  • ½ tsp Crushed peppercorns
  • ½ tbsp Olive oil
  • 1 cup Cabbage chopped
  • ¼ cup Carrots chopped
  • Salt if needed


Cooking the chicken for the filling

  • In a pan or skillet kept in medium flame, put butter and let it melt
  • Add the garlic powder and stir for a minute
  • Then to it add the cubed chicken pieces and toss it for two minutes
  • To it add crushed peppercorns and salt and stir well
  • Add 1/4 cup of water and stir well
  • Close and cook for 20 minutes, stirring intermittently
  • After that, check if the chicken is cooked well
  • Once the chicken is done, let it be on the medium flame for a few more minutes for the gravy to reduce to half
  • Then take the pan off the stove move the chicken to a bowl and drain the stock to another bowl and keep both the bowls aside

To prepare the filling

  • Into a bowl, drop 3 tbsps of Mayonnaise, itlalian seasonings, chili flakes, crushed peppercorns and olive oil and stir well
  • To it add the chopped cabbage and carrots and mix well
  • And then add the cooked chicken and 2 tsp of the chicken stock
  • Add salt if needed
  • Mix everything well

Making the sandwich

  • Spread a little butter on to a pan to grease it and then lay the bread slices
  • Toast only on one side until slight brown in color
  • After that, spread a little butter on the part of the bread which is not toasted
  • Then spread the chicken veggie filling on to the bread evenly on all the sides and in the center
  • Then cover it with another piece of buttered bread which is also toasted on the other side
  • Yummy chicken sandwich is ready!!
  • Do the same for the rest of the slices



As said before, it is such an easy recipe that everyone would enjoy. 
You could make alterations in the recipe by adding hot sauce into the filling or tomato ketchup on the bread or by adding any other vegetables.
I have given the simplest recipe, all the above alterations would be added taste to it.
