Into a bowl, put the tamarind, salt and 1 cup of water
Mix everything well and keep it aside
In a skillet kept on medium flame, pour coconut oil
Put the chopped ginger pieces and fry it until it turns brown
Once fried, take it off the pan and keep it aside for cooling
After cooling, put the fried ginger into a blender
Put Chili powder to it and blend it well without adding water
You will get a powdered form
Meanwhile, to the skillet where the ginger is fried, drop in the chopped small onions
Stir until it gets translucent, drop the curry leaves, green chilies and garlic
Stir everything until well sauteed
Now drop the grounded fried ginger and chili mix
Stir well
Then add the Tamarind water mix that was prepared in the beginning
Add 3/4cup of more water, stir everything well
Check the salt, add it only if needed as we have already added Salt in the tamarind mix
Let the gravy boil and get reduced or thicken
Once the gravy thickens, switch off the stove
