Into a skillet or wok, pour coconut oil and once it is heated put the sliced capsicum
Put 1/2tsp of Chili powder and salt
Mix everything and fry the capsicum for 6-7mins
Then take off the capsicum and keep it to the side
Into the remaining oil, put the chopped coconut slices and fry it until it turns slight brown in color
Then add the ginger, garlic and green chilies.
Stir and saute for 3mins
Then to it add the choppd onions and salt
Stir again and saute until the onion turn soft
Then to it add 2tsp of chili powder and freshly crushed black pepper and stir well
Add cut mushrooms to it, drop in curry leaves and salt
Mix everything well
Close and cook for 15mins until the mushroom is cooked well
Then open, stir, and cook on high flame until the water is almost gone
After that, drop the fried capsicum which is kept aside
Stir for 5mins and turn off the flame
