Want to try a mushroom recipe for rice or chappathi? Try this Mushroom Stir fry, it is a good combination for rice for lunch. The capsicum, the crunchy coconut and the freshly crushed pepper gives the recipe an awesome flavor.

Ingredients
  

  • 1 Capsicum Cut into slices
  • 250 gms Mushrooms Cut into medium size pieces
  • 1 big Onion chopped
  • 2 tbsp Coconut oil
  • 2 tbsp Coconut slices
  • 1/2 tsp Ginger minced
  • 2 tsp Garlic minced
  • 2 or 3 Green Chilies Slit into halves
  • tsp Chili powder
  • 2 tsp Black pepper Freshly Crushed
  • Curry leaves
  • Salt as per taste

Instructions
 

  • Into a skillet or wok, pour coconut oil and once it is heated put the sliced capsicum
  • Put 1/2tsp of Chili powder and salt
  • Mix everything and fry the capsicum for 6-7mins
  • Then take off the capsicum and keep it to the side
  • Into the remaining oil, put the chopped coconut slices and fry it until it turns slight brown in color
  • Then add the ginger, garlic and green chilies.
  • Stir and saute for 3mins
  • Then to it add the choppd onions and salt
  • Stir again and saute until the onion turn soft
  • Then to it add 2tsp of chili powder and freshly crushed black pepper and stir well
  • Add cut mushrooms to it, drop in curry leaves and salt
  • Mix everything well
  • Close and cook for 15mins until the mushroom is cooked well
  • Then open, stir, and cook on high flame until the water is almost gone
  • After that, drop the fried capsicum which is kept aside
  • Stir for 5mins and turn off the flame
  • Yummy and Easy Mushroom Stir Fry is Ready!!
