Into a pan kept on medium pan, pour coconut oil
Once it is heated, add the ginger, garlic and green chilies chopped
Stir for few minutes until it turns soft
Then to it add chopped onions and stir until soft
After that, to the pan add the carrots, beans and bell peppers(capsicum) and stir until half done
Add a little salt for the veggies to cook faster
Add turmeric and stir for 2 mins
Once the veggies are half done, add the hot water and stir well
Add salt to taste, let the water be a little salty, then that would be perfect once after adding the vermicelli
Let the water boil for 1 minute or until the veggies are just cooked
Then to it add the roasted vermicelli and stir well to the water
Keep stirring until the water is completely absorbed and the vermicelli is cooked
Add curry leaves and stir
Once stirred, close the pan and cook for 8 mins on low flame
After that, open the pan and gently stir the upma to separate the strands otherwise it would be sticky
Keep stirring and move to another serving bowl
Yummy Vermicelli Upma is ready
Serve hot with or without any chutney
