Here comes the recipe for making Calzone at home. Calzones are a kind of folded pizza. When pizza dough is folded with some yummy cheesy stuffings inside, then it is called a calzone. The fillings could be anything, like just some veggies and cheese, or with chicken or any other meat and cheese, or a combination of both, or just a few pepperonis and cheese. Here I'm showing an easy-filling recipe for calzone made with chicken and broccoli and loads of cheese.
For those of you, who struggle to make your kids eat broccoli, it is one such way where they eat some chicken and broccoli without making any fuss. 😄😄
A note to remember:
*** While making calzones, it should not be overfilled as it may spill over while baking, but that doesn't matter when you want to please those little eyes eagerly waiting to see the cheese oozing out. 😂😊 This is when motherhood overpowers the perfectionist in me. 😂😂😂***
***For a proper calzone, the filing should be only a quarter of the base.***
You could use a stand mixer to make the dough and the water required would go a little more or less, so start adding water little by little and see how much you would need to knead the dough.

Ingredients
  

For the Dough

  • 2 cups All-purpose flour Sifted
  • 1 tsp Garlic powder
  • tsp Yeast Active dry yeast
  • tsp Sugar
  • 1 tsp Salt
  • ½ tbsp Olive oil
  • ¾ cups Warm water may need a little more as you knead

For the fillings

  • 200 gms Chicken Boneless, 1 inch thickness
  • 150 gms Broccoli florets
  • ½ tbsp Butter
  • 1 +½ tsp Chiili flakes
  • 1 tsp Pepper powder
  • ¼ cup Water
  • 2 tbsp Water
  • Salt to taste
  • 1 tsp Basil leaves dried
  • ¼ tsp Crushed peppercorns
  • 2 cups Mozzarella cheese
  • 1 cup Pizza sauce
  • 1 tbsp Italian seasonings

Instructions
 

Making the dough

  • Into a bowl sift all-purpose flour, put the garlic powder, yeast, sugar and salt and stir
  • Slowly add warm water, with a wooden spoon or spatula mix everything
  • Once mixed pour the olive oil, move to a stand mixer and mix everything well until a soft and smooth dough is formed
  • You can use hands to knead the dough as I did.
  • Close and leave it aside to proof for 1 hour.

Making the Chicken Broccoli filling for Calzone

  • Into a pan kept on medium flame, put the butter
  • As it melts, drop 1 tsp of Chili fkaes and pepper powder and stir for a few seconds
  • After that add the chicken pieces, salt and stir
  • Add dried basil leaves and stir for 2 mins
  • Add 1/4 cup of water and stir
  • Close and cook for 15-20mins
  • Once cooked, move to another bowl
  • To the same pan with a little butter (still on medium flame) drop the broccoli florets
  • Put 1/2tsp of chili flakes, salt,crushed peppercorns and stir for 2 mins
  • Once stirred, pour 2 tbsp of water and close
  • Cook for 10-15mins until the broccoli turns soft
  • Then move to another bowl and set aside

Making the calzone

  • Preheat the oven to 425° Fahrenheit
  • By this time, the dough would have risen
  • Take it off the bowl and press the bowl for a few more times and make 4 balls out of it
  • Spread a little all-purpose flour on the clean counter and roll each balls into 8 inch big round pizza forms
  • Do not roll into too thin pizza base
  • Once done, drop one tbsp of pizza sauce and spread it on the top side
  • And then to one side of the base, put mozarella cheese, top it with cooked chicken, broccoli and again cheese
  • Drop italian seasonings on top of the cheese
  • Then fold with the other side of the pizza base and cover it
  • Do not fold tightly
  • Then press the edges and join it
  • If you need, dab a little water to fix the edges
  • Using a knife, make small cuts on the calzones, and then brush a little olive oil on top
  • Move it to a baking tray lined with baking sheet
  • Bake it in 425° Fahrenheit for 20mins or until the outer side turns slightly brown
  • Yummy chicken Calzone is ready
  • Serve hot with or without sauce

Notes

Do not over fill with the fillings as it would fall out while baking, but if you like it way then it is totally fine. I did so as my girls love to see the cheese oozing out of it. The happiness they have when they see the cheese out is immeasurable and I just fall every time for that. So it is totally up to you, but for a proper calzone, the filing should be only a quarter of the base.
