Here comes a yummy and spicy Andhra style chicken recipe that is a great combination with roti or rice. I got this recipe from one of my friends, the way she made was very spicy for me, so I made a few changes in the number of chilies added to the recipe and found it perfect for my family.
The chicken is first marinated in very few spices and then kept for marination. Meanwhile, Karam podi is prepared. Karam podi is a kind of powder which is made with few spices, a few varieties of daal and grated coconut. Then chicken is cooked till tender and to it the karam podi is added to it and cooked for another 5 mins to get this yummy Karam podi chicken. I have added a lot of curry leaves to it. There are variations where you can add cilantro as well but for me I liked just the curry leaves and it was awesome.
So let us see get into how Karam Podi is made

Ingredients
  

For the Karam Podi

  • 3 tsp Urad daal
  • 3 tsp Chana daal
  • 2 tsp Fennel seeds
  • tsp Cumin seeds
  • 1 tbsp Peppercorns
  • 3 tsp Coriander seeds
  • 15 Dried Red Chilies
  • 6 tbsp Grated coconut
  • 1 twig Curry leaves
  • 1 inch ball size Tamarind
  • 1 tsp Salt

For marination of the chicken

  • 1 kg Chicken
  • 2 inch Ginger grated
  • 6 cloves Garlic grated
  • 1 tsp Turmeric powder
  • 2 tsp Chili powder
  • 3 tsp Lemon juice
  • Salt as needed

For the cooking of chicken

  • 3 tbsp Vegetable oil
  • ¼ cup Peanut
  • 5 Green chilies
  • 4-5 twigs Curry leaves

Instructions
 

Marinating Chicken

  • To a bowl , place the chicken pieces , and add all the ingredients under "For marination of the chicken"
  • Apply well the ingredients on the chicken and keep it aside for 30 mins

Making the Karam Podi

  • To a pan kept on low flame, put the urad daal, chana daal, cumin seeds and fennel seeds and stir for 3 mins
  • To it add the peppercorns and coriander seeds and stir for 2 mins
  • After that, add the dried red chilies and stir until the red chilies get dark spots on it.
  • Make sure the chilies don't get burnt
  • Then add the grated coconut and curry leaves and stir well
  • Stir until the coconut starts changing color. You don't have to wait till it gets brown color
  • Then add the tamarind and stir for another 2 mins
  • And set it aside to cool down
  • Once cooled, Move it into a grinder, add a little salt to it and grind into a powder form
  • And keep it aside

Cooking chicken

  • To another pan or Kadai, pour the vegetable oil
  • Put peanuts, green chilies and curry leaves into the oil
  • Stir for few mins until they turn fried
  • Then move it out of the oil and place in a bowl and keep aside
  • To the oil in the pan, slowly drop the marinated chicken pieces
  • Stir well and close and cook for 25 – 30 mins until the chicken is tender or evenly cooked
  • Don't forget to stir intermittently
  • Then once the chicken is cooked, check if salt is required, if so, add enough salt to the chicken and stir well
  • Add the karam podi and stir well
  • Stir well that the powder is applied all over the chicken pieces
  • Add more curry leaves to it and keep stirring for 3- 4 mins
  • Finally add the fried peanuts, curry leaves, and green chilies and stir once more
  • Yummy Karam podi chicken is ready
