Want to try making egg curry but not the usual egg masala? Here it is a combination of butter, cashews, milk resulting in a beautiful egg butter masala. One of the best ways to feed little ones who do not like to chew the veggies and cashews. Try and see, you would love this….

Ingredients
  

For Preparing Eggs

  • 4 Boiled Eggs (shells removed)
  • 1/2 tbsp Vegetable oil
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Chili powder

For Preparing the Gravy

  • tbsp Vegetable oil
  • 1/4 tsp Fenugreek seeds
  • 1/4 tsp Cumin seeds
  • 1/4 tsp Fennel seeds
  • 2 big Onions (finely chopped)
  • 1 tbsp Ginger-garlic paste
  • 1/4 tsp Turmeric powder
  • tsp Chili powder
  • 1 tsp Kashmiri Chilli powder
  • tsp Coriander Powder
  • 1 tsp Garam masala
  • 3 medium Tomato
  • 15 Roasted Cashew nuts
  • 1/2 cup Warm water
  • Salt to taste

For blending

  • 1/2 cup Milk

For final mixing

  • 1 tbsp Butter
  • 1/2 cup Water
  • Cilantro a handful
  • Salt (if needed)

Instructions
 

Preparing Eggs

  • With a knife, make small vertical cuts on the eggs (only 4-5cuts)
  • Into a pan, pour 1/2tbsp of Vegetable oil
  • Put turmeric powder and chili powder
  • Stir for 1 min
  • Then put the eggs and stir for 2-3mins until the eggs are coated with turmeric ad chili powder
  • Take the eggs and move to another bowl

Preparing the gravy

  • Into the same pan, pour 1/2tbsp of vegetable oil
  • When the oil turns hot, put fennel seeds, fenugreek seeds, and cumin seeds
  • Once it starts spluttering, put the chopped onion and stir until sauteed
  • Then put the ginger garlic paste and stir until the raw smell fades
  • Then drop the powders: turmeric, chili powder, Kashmiri chili powder, coriander powder and garam masala.
  • Stir everything for a few minutes until a nice aroma comes
  • Then add the chopped tomatoes, cashew nuts and salt to taste
  • Stir and pour 1/2cup warm water
  • Mix everything
  • Close and cook until the tomatoes turn mushy
  • Once the tomatoes are cooked, turn off the stove and keep it aside to cool

Blending the mix

  • Once the mix is cooled, put it into a blender
  • Pour 1/2cup milk into it and blend it well
  • Blend to get a smooth paste
  • Keep it aside

Final mixing

  • Into the same pan, put 1tbsp butter
  • Then pour the blended mix into the pan, stir well into the butter
  • Wash off the remains in the blender with 1/2cup of water and pour into the mix
  • Then once the mix turns hot, drop the eggs, cilantro, and salt(if needed)
  • Mix everything well on low flame
  • Close and cook for 5mins until the gravy boils and turn off the heat
  • Yummy Egg Butter Masala Ready!!

Notes

I tried this version of egg curry because it is very difficult for my girls to eat cashew nuts but they love eggs.. I made the gravy where in they wouldn’t even know Cashews are there. Also, the cashews give the gravy a buttery and thick texture. 
Parenting is also discovering new recipes that would satisfy their little ones taste also but also maintaining the daily nutrients they should have. 😃
They both loved to have Egg Butter Masala with hot roti/ tortillas and fried rice.
