A simple easy and yummy side dish recipe for chapathi, roti and even rice. It is made with mutter or known as dried green peas that are soaked overnight or at least 4hrs and then cooked in pressure cooker.
This recipe requires just the basic ingredients and it would be ready in less than 30mins.
The mutter makes the recipe crunchy with a beautiful flavor of eggs and some herbs and spices.
With the basic available ingredients at home, you are good to go for this yummy and healthy egg mutter recipe.

Ingredients
  

  • 1 cup Dried green peas Soaked overnight and cooked in pressure cooker for 4 whistles or just until cooked
  • 4 large Eggs
  • Salt for taste
  • 2 tbsp Vegetable oil
  • 1 tsp Mustard seeds
  • 1 tsp Fennel seeds
  • 2 Dried Red Chilies
  • Curry leaves
  • 1 tsp Garlic Minced
  • ½ tsp Ginger Minced
  • 3 or 4 Green Chilies chopped
  • 1 big Onion chopped
  • tsp Chili powder
  • ½ tsp Turmeric powder
  • ¼ cup Warm water
  • ¼ cup Cilantro chopped

Instructions
 

  • Cook the dried green peas (which is soaked in water overnight or atleast 4hrs ) in apressure cooker for 4 whistles or until the peas are cooked
  • Keep it aside
  • Into a skillet on medium flame, pour oil
  • Drop mustard seeds and fennel seeds and let it splutter
  • After that, drop the dried red chilies and curry leaves and stir for 1 min
  • Then, put the garlic, ginger and green chilies and stir well for 2 mins
  • To it add the chopped onions and stir until sauteed
  • Once sauteed, add the chili powder and turmeric powder and mix well
  • Then add the cooked peas and stir well
  • Add the warm water and close and cook for 8mins
  • Meanwhile, break the eggs into another bowl
  • Beat them until well beaten with added 2 tbsp of water and salt
  • And then keep it aside
  • Then once the eggs are beaten well, open the skillet where the peas are getting cooked
  • Stir and add the beaten eggs and close and cook for 3mins
  • Then open and stir well and mix everything
  • Add the cilantro and mix
  • Keep stiring for another 2-3min
  • Yummy Egg Mutter Bhurji ir Ready
  • Serve hot with Roti or chapathi.

Notes

You could pressure cook the dried green peas earlier and could be stored in the refrigerator for a few days. And then you could use 1 cup of it to make the Bhurji.
This is an easy recipe and healthy as well. Easy to follow procedures that anyone could make.
