Chicken Kabsa is a Middle Eastern Recipe mainly Saudi Arabian Dish, with Flavored rice and Grilled chicken. Few of the ingredients are not available everywhere. So here we have tried making the recipe with ingredients available everywhere in India. The taste has almost come to the original recipe. Try this out and you would definitely love. it..

Ingredients
  

For preparing Chicken

  • 1 kg Chicken cut into big pieces
  • 1 tbsp Butter
  • 1 tbsp Vegetable oil
  • 1 tbsp Garlic chopped
  • 1/2 tbsp Ginger chopped
  • 1 big Onion chopped
  • 2 or 3 Green Chilies Slit into half
  • 1 cup Tomato Puree
  • 1 pinch Saffron
  • 3 medium Tomato chopped
  • 2 tbsp Lemon Juice
  • Salt to taste

Spices

  • 1/4 tsp Nutmeg powder
  • 1/2 tsp Cumin powder
  • 1/2 tsp Allspice powder recipe in Notes below
  • 1/2 tsp Cardamom powder
  • 1/2 tsp Black pepper powder
  • 1/2 tsp Coriander powder
  • 1/2 tsp Chili powder

For The Rice

  • 3 cups Basmati rice soaked in water for 30mins
  • 4 cups Hot water (or more as required just to cook the rice)
  • Salt

For frying

  • 1 tbsp Vegetable oil

For garnishing

  • Few Almonds Slivered
  • Few Raisins

Instructions
 

Cooking Chicken

  • To a heavy bottom cookpot on medium flame, pour butter and vegetable oil
  • Put Garlic, ginger, Saute for few mins
  • Then add chopped onion and green chilies
  • Stir until sauteed
  • Then to it pour Tomato puree and stir well for 5mins
  • Then on medium flame, add all the spices, and saffron and stir well
  • After 3mins, drop the chopped tomato, salt and stir until the tomatoes turn mushy
  • Once done, put the chicken pieces and mix well
  • Pour warm water and mix
  • Close and cook for 20-25mins or until the chicken is cooked
  • Then take out the chicken pieces from the pot and keep it aside

Cooking Rice

  • To the gravy (leftover from the cooked chicken), drop the soaked rice
  • Gently stir into the gravy
  • Once stirred, pour 4cups of hot water (or more depending on how much gravy is left in the pot
  • Put salt
  • Stir well
  • Cloe and cook until the rice is cooked well

Frying the chicken

  • To a skillet, pour vegetable oil
  • Place the cooked chicken on it and fry it for 5-6mins
  • Or just all the sides turn brown
  • You Could even grill the chicken pieces in an oven
  • Fry the pieces and take it off the stove

Final placing

  • Slowly place the chicken pieces on the rice and serve
  • Yummy Chicken Kabsa Ready

Notes

Chicken Kabsa has so many variations. This recipe is mainly for those who do not get some ingredients which are in the original Kabsa recipe like the lime powder, white pepper powder. I have substituted it with the alternatives, it may not yield the original taste but still it was very close.
